Comforting Mushroom Pasta

Today is the start of the new year at university. A new year, new beginnings, new chances. It also means that the summer holiday has ended. And with that, you will probably have less time to make dinner than the past months. So, combining the new season with lack of time, this mushroom pasta is here to help you out!

I always think the beginning of a new study year is exciting. You will be attending new classes, meet new people, be reunited with friends. All a lot of fun, but sometimes a bit scary as well. Will I be able to find the right classrooms? Will people like me? Will my new classes be interesting? At least, that’s what is going on in my head on such days.

I kind of like that excited feeling. You know, there is nothing major that can go wrong, so there is no real stress. But it does give a bit of an edge to a Monday.

Maybe you will be starting an incredibly interesting new course. That might have you bubbling over with inspiration and energy at the end of the day. Or maybe you haven’t seen some of your friends all summer, and you are overjoyed to talk to them again. Or maybe you just had a nice bike ride to the university buildings. There are so many reasons why you could feel happy today!

And if all that excitement has made you exhausted by late afternoon, then an easy dinner is just what you need! Like this mushroom pasta. It can be ready in only fifteen minutes, and it is just so soft and creamy and comforting and nice. Eat it with your (new) friends, your long-lost roommates or quietly on your own, whatever you wish!

Oh, and if you are already working fulltime, or still in high school, please don’t feel ignored! This pasta would be wonderful after a long day at the office, or a school too!

Comforting Mushroom Pasta (serves 1)

What you will need:

  • As much pasta as you like. (I usually eat about fifty grams uncooked, but some of my friends can easily munch away three or four times that amount…)
  • One or two tablespoons of sour cream
  • A handful of mushrooms, like Portobello or chestnut mushrooms
  • A splash of olive oil
  • Some salt and pepper
  • Optional, but recommended: a bit of parmesan cheese.

How to:

  1. First, put water on to bring to a boil.
  2. Meanwhile, start scrubbing the mushrooms and removing their stems.
  3. When the water comes to a boil, turn heat down low, add the pasta and put on a lid.
  4. While the pasta is cooking, chop the mushrooms up in discs.
  5. Now heat a skillet with some olive oil over medium to high heat. When hot, add the mushrooms. Keep stirring till they become slightly soft. Now add the sour cream, salt and pepper. Stir. Then turn heat down low.
  6. When the pasta is cooked, drain it and add to the skillet.
  7. Toss around a bit and then transfer to a bowl or plate. Optionally top with a bit of parmesan cheese.
  8. Enjoy!

Note: there is no cheese in the picture because I forgot to get some at the store. Which is a pity, because it does take the dish from nice to superb. So, if you can, add some!

    Oee wat ziet die pasta er lekker uit! Ik krijg er trek van!
    Iedereen gaat nu weer terug naar school en heeft de vakantie er weer op zitten. Het lekkere van mijn werk ik dat ik zelf bepaal wanneer ik op vakantie ga! :) Dus ik heb mijn vakantie nog tegoed en ga als iedereen weer aan het werk is lekker op vakantie :P
