Festive apple cake for one

The holiday season has now well and truly begun. It’s time to get out the decorations, start preparing the festivities and enjoy delicious warming foods. We celebrated the Dutch “Sinterklaas” holiday last weekend, which was so cosy and so much fun! And I think this festive apple cake for one is the perfect snack to go with such celebrations!

First of all, I’d like to show you some of the presents I made for our holiday festivities. Even though in our small family we are each of us too old to get presents from the real Sinterklaas, we do celebrate the holiday every year still. We all buy presents for each other and write nice poems to go with the gifts.

This year, I had bought both my parents very interesting books, but I wanted to do something more. So I thought of making advent calendars for them. It was such fun making those and looking for small presents! And I have to say, I’m quite pleased with how they ended up looking as well.

For my mum, I made an enveloppe-based calendar, using a piece of cardboard as base. Some washi-tape did the trick to keep the enveloppes closed dispite their sometimes volumous contents and was very decorative at the same time. It worked perfectly!

The calendar for my dad was definitely more time-consuming, as I had gotten it into my head that it would be nice to sow little satchels to put the presents in. In the end, though, it looked amazing and the work was very much worth it!

They both loved their presents (and I mine, by the way) and by the end of the evening we were all feeling blissfully happy with our new things and the cosiness of the celebrations. You just have to love the holidays, right? If only for the atmosphere and the food!

Speaking of which, I think it’s time to talk about that festive apple cake. That is what you came here for, after all.

How adorable are those little owls?

Fair enough, apples and spices and maple syrup are always a good idea. They are each of them great individually, but even more so when combined in a festive apple cake that you can eat all by yourself. So without further ado, here comes the (very easy) recipe:

Festive apple cake for one

Ingredients:

  • Half an apple, diced into small pieces (eat the rest while the cake is baking!)
  • Three heaping tablespoons of whole wheat flour
  • One tablespoon of maple syrup
  • Half a tablespoon of vegetable oil
  • One fourth teaspoon of baking powder
  • One sixth teaspoon of apple pie spices (or other similar mix)
  • A pinch of salt
  • Eight tablespoons of water, or more if needed
  • Optional: some raisins

Directions:

  1. Preheat your oven to 180 degrees Celsius (convection).
  2. Mix all the ingredients, except the apple, together.
  3. Stir until you get a nice, elastic consistency. The batter should still have some texture, but it should be soft enough to stir easily. Add a bit more water if your batter is still too stiff.
  4. Now fold in the apple (and optional raisins).
  5. Grease a small ramekin and transfer the batter into that.
  6. Bake for about 20 – 25 minutes (depending on how dough-y you want the cake to be).
  7. Enjoy straight out of the ramekin, or let cool to eat later.
