Healthy Spiced Mini Pancakes

Oh, those lovely early mornings! Waking up, pulling on some warm sweater and heading to the kitchen for a delicious breakfast, what more could a person want? With the festive season coming up, I am craving spiced foods even more than usual. I found these mini pancakes to be the perfect thing. They are spicy and warming, yet have a certain freshness as well. And they are completely healthy!

Worth the Effort!
There are some mornings when you have just a little bit more time than usual and you would like to treat yourself to something special. For me, mornings like that are for pancakes. I mean, I love oatmeal, I really do! But a bit of variation every now and then is nice as well. So although these pancakes take a little more time, they are definitely worth it!


Healthy Spiced Mini Pancakes (makes one serving)

What you need:

  • ½ banana
  • 15 grams of rolled oats
  • 40 grams of wholegrain spelt flour
  • ½ teaspoon of a spice mix (I like to use Dutch “speculaaskruiden”, but apple pie spices or something similar to that would work as well)
  • A pinch of salt
  • ¼ teaspoon of baking powder
  • 6 to 7 tablespoons of milk of choice
  • Optional add-ins like crushed pecan nuts, dried cranberries, almond slices (Or whatever you think would be nice, feel free to experiment!)
  • Maple syrup for topping (see note)

How to:

  1. Mash the banana.
  2. Then add in all of the other ingredients.
  3. Mix well.
  4. If the mixture is still a bit lumpy, add some more milk. It should eventually have the consistency of paint. If you would like to add any add-ins, you can do that now.
  5. Set the batter aside for a few minutes. Meanwhile, take a skillet, add just a drop of vegetable oil and heat over medium heat.
  6. When the skillet is hot, take about a tablespoon of batter at a time, and drop it in the pan. You can add some more if you would like to have bigger pancakes.
  7. When you see some bubbles forming, gently flip over the pancakes with a spatula.
  8. Bake for a minute more on the other side. When you think they still look rather pale, bake some more on both sides.
  9. Transfer to a plate while baking the other pancakes.
  10. Top with some maple syrup and optional other toppings. (Extra cinnamon, some cocoa nibs and fresh fruits are all delicious toppings)
  11. Take some time to enjoy your delicious breakfast!

Note: I think maple syrup has such a warming and spicy flavour, which is perfect on these pancakes. But it is rather expensive and can be hard to find in stores, so topping with honey instead is a very good second option.
