Slow Cooker Apple and Berry Compote

I have finally, finally gotten a slow cooker. It had been on my wish list for a long time, and now I can at last try all of the many delicious recipes using it. My first experiment was this compote, which turned out amazingly well!

Maybe it’s just me, but I think there is something very cosy about a slow cooker. You can just throw in a bunch of ingredients, and in a few hours all of it becomes a delicious, warm, soft whole. It’s like the machine is looking after you in some way, having a nice meal ready when you need it. Or a comforting snack, like this compote.

And, apart from being totally nice and cozy and handy, a slow cooker teaches you lots of patience. Which might be very good for people like me. With this compote, for example, I put the ingredients in, turned on the slow cooker and let it do it’s thing… or, that was the idea. In reality, I walked over to take a look about every five minutes. Which meant I basically saw the same thing every time. I have to admit it was a bit frustrating. But also a very good lesson in being zen. For in the end, this very patient, slow food is much more tasty than something you might whip up in a few minutes. I’ll just have to learn to deal with it. And if that means I have to make lots and lots of slow cooker meals, well, that shouldn’t be a problem, right?

Here’s the recipe for you. You can easily change it up a bit by using different kinds of berries, extra spices or other add-ins. (See notes for suggestions)

Slow cooker apple berry compote

What you will need:

  • One apple, diced (I used half a granny smith, half a red apple)
  • 200 grams of blueberries
  • 200 grams of red currants
  • A tablespoon of maple syrup
  • A teaspoon of cinnamon
  • A tiny pinch of salt
  • Half a tablespoon of vegetable oil

How to:

  1. Combine everything in the cooking bowl of the slow cooker and mix well. Turn on the slow cooker at low heat and leave for two and a half hours.
  2. Yes, it’s really that simple! Now you will just have to wait till it’s finished.
  3. Enjoy with some yoghurt, ice cream or on top of porridge.

The compote is delicious when eaten warm, but also very nice after cooling. You can store it in the fridge for a few days, if necessary.
