Nuts about Hazelnuts (Three Breakfast Recipes)

A I wrote before, there is no shortage of hazelnuts at my parent’s house at the moment. The harvest keeps coming in, and a heaping bowl of nuts was once again waiting for me this weekend. Only spending one day at my parent’s home, I brought some hazelnuts with me to use during the week. Here are three different hazelnut-containing breakfast recipes to inspire you.

Take a few extra minutes in the morning to prepare on of these delicious hazelnut breakfast recipes. You might have to get up a little bit earlier, but it will be worth it when you start eating. (And when you have a full stomach during the rest of the morning). Just try it!

Chocolate-banana oatmeal with roasted hazelnuts
Ingredients:
1 banana
About 100 ml milk of choice (this time, I used Lima Spelt)
40 grams of rolled oats
Pinch of salt
1 tablespoon of cocoa powder
A small handful of hazelnuts
Optional: maple syrup to taste

Start by heating a small saucepan to roast the hazelnuts. Keep stirring and be careful not to burn them! When they become light brown and fragrant, take off the fire and chop them.

While the nuts are roasting, mash half of the banana and mix with the milk. Add the mixture to your oats. Stir and add some more milk if needed. The oats should be swimming around in the milk/banana mix. Put on the stove and reduce the heat when the milk starts bubbling. Leave on low heat for a couple of minutes.

When most of the milk is absorbed, add salt and cocoa powder to the oatmeal. Stir thoroughly to make sure no cocoa-lumps are formed. If you have a sweet tooth, add in some maple syrup now as well. Let it simmer till it has the right consistency. Then transfer to a bowl, slice the other half of the banana, add the chopped hazelnuts and a splash of milk.

Yoghurt with warm apples and hazelnut granola
Ingredients:
150 ml of yoghurt
1 apple
20 grams of rolled oats
A teaspoon of cinnamon
1 teaspoon of rice syrup (to taste)
A small handful of hazelnuts

Start by heating up a saucepan and roasting the hazelnuts.
While the nuts start warming up, slice the apple in thin wedges.

When the hazelnuts are starting to brown, add rolled oats to the pan. Keep stirring to prevent from burning! When you thing the oats are almost roasted enough, add a small drop of rice syrup and stir well. Make sure there are no big lumps formed. Transfer the granola to a bowl and set aside.

Now add the apple wedges and cinnamon to the heated pan and let them bake a bit. Make sure to keep stirring (again). When the apple starts to become brown and soft, add a little bit of rice syrup. Stir well and let bake for about a minute more.

Meanwhile, spoon some yoghurt in a nice bowl. Once the apples are finished, add them to the yoghurt and top with the granola. Enjoy immediately.

Ingredients:
½ banana, mashed
About 100 ml milk of choice (this time, I used Lima Spelt)
40 grams of rolled oats
Pinch of salt
½ teaspoon chai spices (pre-mixed, or use cinnamon, ginger, cloves and nutmeg)
A small handful of hazelnuts

Mix mashed banana with milk and add the mixture to your oats. Stir and add some more milk if needed. The oats should be swimming around in the milk/banana mix. Put on the stove and let simmer for about five minutes.

While the oats are simmering, heat a small saucepan and roast the hazelnuts. Keep stirring and be careful not to burn them! When they become light brown and fragrant, take off the fire and chop them.

When most of the milk is absorbed, add salt and spices to the oatmeal. Let on the stove till it has the right consistency. Then transfer to a bowl, add hazelnuts and a splash of milk.
