Oatmeal with Apple, Maple and Pecan

Oh, how I love autumn! The days are getting shorter, rain and wind are around more often, scarves and gloves can we worn once again. All of this gives me such a warm and cosy feeling.

Of course it’s not only grey and cold. That’s part of autumn’s charm. You know how it can be rainy for days, and then suddenly the sun is shining again and everything just feels so clean and fresh? Those moments are the best!

After a cloudy day, there might even be a sunset like this!

With the grey weather of the last couple of days, I decided to celebrate autumn this morning with a delicious bowl of oatmeal with apple, maple and pecan. It’s the perfect start to your morning, warming you for the cold day ahead.

Oatmeal with apple, maple and pecan

  • 1 small apple
  • 40 grams of rolled oats
  • 150 mL milk of choice (I used Lima’s Spelt Original)
  • 1 date (fresh or dried, just not candied)
  • A pinch of cinnamon
  • A pinch of salt
  • Some pecan nuts (walnuts will also work very well)
  • A teaspoon of cocoa nibs
  • A tablespoon of maple syrup


Stir milk and oats together and put on the stove.

Meanwhile, dice apple into small pieces, and the date into even very, very, small pieces.

When the milk starts to boil, reduce heat and add apple and date. Keep on a low simmer and stir occasionally.

When most of the liquid has been absorbed, add the salt and cinnamon.

When the consistency is right (after about five minutes), transfer to a bowl.

Top with crushed pecan nuts, cocoa nibs and maple syrup. I like to add a small dash of milk as well.
