Being an early riser has its advantages. Like having ample time to prepare breakfast. And enjoy every single bite of it. Maybe that’s why breakfast is my favourite meal of the day… This crumble takes a bit more time to prepare than a normal bowl of porridge, but most of it is just the waiting time when it’s cooking in the oven. As you can use that time for taking a shower, getting dressed, doing some reading, it’s not really such a waste, is it? And it will be worth it, trust me!
When I decided to prepare this breakfast, the night before, it was warm and sunny and just very summer-like. A fruity fresh breakfast would be the perfect thing for a day like that. So I came up with this peach crumble and started looking forward to it. (I even dreamed about fruit-filled baking, can you believe it?!)
But then, I woke up, to the sound of raindrops. After getting dressed and going downstairs, it had stopped raining. Still the morning was grey and cool. Nothing wrong with that. Not at all! I like those mornings a lot too, actually. But it wasn’t very summery. So, in the end…
…I found out this peach crumble works very well on those mornings too!
It’s actually quiet warming and satisfying. Still fresh, but somehow very comforting. Basically, it’s the perfect thing for both warm summer mornings and chilly start-of-autumn ones. Enjoy!
Peach Crumble (serves one)
What you will need:
- One peach (or nectarine)
- Two tablespoons of (big) rolled oats
- Three tablespoons of (small) rolled oats
- One tablespoon of maple syrup
- A quarter of a tablespoon of vegetable oil
- A pinch of salt
- A pinch of cinnamon
How to:
- Pre-heat the oven to a 175 degrees Celsius. (Convection)
- Peel and dice the peach, put in a small baking tray
- Mix the dry ingredients in a separate bowl. Then add the oil and maple syrup, mix till you get a very loose, slightly crumbly mixture. Add a tiny bit of water if you think it is still too dry.
- Now spoon the crumble on top of the peaches.
- Bake for about 25 minutes, till the crumble has become a golden brown.
- Serve with some yoghurt.
- Enjoy!
