Summery Zucchini Noodles

Sometimes all you want is a simple and refreshing meal. Especially with this warm summer weather. Here’s a delicious recipe that will instantly bring summer to your plate!

This recipe of zucchini-noodles always does the trick when I am craving a bowl of comfort food, but don’t want a heavy meal. It is light and creamy at the same time. And to add to that, it is incredibly fast to make. Perfect for a quick meal after a long day at the university or at work!

Ingredients: (serves 1)

One serving of noodles of choice
Half a zucchini
A tablespoon heaping with crème fraîche
A drop of olive oil
A tablespoon of lemon juice
Salt and pepper
Optional: grated parmesan for topping

Prepare the noodles according to the instructions on the package. Meanwhile, wash and dice your zucchini into small chunks, set aside.
In a sauce-pan, heat olive oil and lightly bake the zucchini (only till it becomes a little bit soft). Then add crème fraîche. When the cream starts bubbling, add lemon juice. Stir together and add salt and pepper to taste.
Now add the noodles to the sauce and stir. When all is (kind of) mixed and warm, transfer to a plate or bowl.
Optionally top with parmesan cheese. (I recommend you don’t leave out the cheese, but then, I am a bit of a cheese-addict.)


PS. As you may have noticed, I’m not really one for cooking with exact measurements. With this recipe it’s quite easy to adjust to your own taste and add less or more of an ingredient if desired.
